Hoe Pea pancakes with smoked salmon and creme fraiche. te bereiden
Blanch the peas in boiling water for 1 minute; drain, but save 2 tbsp of the pea water. Set aside 1/3 cup of the blanched peas. Put remaining peas in a blender with 2 tbsp of the pea water and the egg; blend till smooth. Put the puree in a glass bowl and stir in the flour together with a pinch of salt and a grind or two of white pepper.
Whisk together the creme fraiche with wasabi paste to taste.
In a large skillet over medium to high heat, warm the safflower oil. Pour in enough of the pea puree to form 4 pancakes; saute the pancakes for 3 minutes on one side. Flip over and saute for another 2 - 3 minutes or till lightly browned.
Put one pancake in the center of each plate; layer the smoked salmon slices in a circle on top of the pancake and pipe a roset of the Wasabi creme fraiche on top of the salmon. Top the creme fraiche with 2 tsp of salmon roe.
